Ingredients

  • 1 pound Beef chuck roast
  • 2 tablespoons Fresh ginger, peeled and sliced
  • 4 cloves Garlic, minced
  • 8 cups Beef broth
  • 3 tablespoons Soy sauce
  • 2 tablespoons Fish sauce
  • 2 tablespoons Hoisin sauce
  • 1 tablespoon Brown sugar
  • 2 pods Star anise
  • 1 Cinnamon stick
  • 8 ounces Rice noodles
  • 1 Carrot, julienned
  • 4 Green onions, sliced
  • 1 cup Fresh cilantro, chopped
  • 2 Lime, cut into wedges
  • 0 to taste Salt
  • 0 to taste Pepper

Directions

Step 1

Trim any excess fat from the beef chuck roast and cut it into large chunks (around 2 inches).

Step 2

In a slow cooker, combine the beef, ginger, garlic, beef broth, soy sauce, fish sauce, hoisin sauce, brown sugar, star anise, and cinnamon stick. Stir to mix the flavors together.

Cover the slow cooker and cook on low for 6-7 hours or until the beef is tender and easily shredded.
