  • 3 pounds Beef chuck roast
  • 1 teaspoon Salt

  • 1 large Yellow onion, sliced
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 0.5 cups Balsamic vinegar
  • 1 cup Beef broth
  • 3 tablespoons Soy sauce
  • 2 tablespoons Honey
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the beef chuck roast all over with salt and ground black pepper.

Step 2

Heat a large skillet over medium-high heat and add olive oil. Sear the beef on all sides until browned, about 4-5 minutes per side. Transfer the seared beef to the slow cooker.

Step 3

In the same skillet, add the sliced onion and sauté for 2-3 minutes until slightly softened. Add the minced garlic and grated ginger and cook for an additional 1 minute until fragrant. Transfer the onion mixture to the slow cooker.
