Ingredients

  • 4 pounds Pork shoulder roast
  • 32 ounces Sauerkraut
  • 1 large Yellow onion
  • 1 large Apple
  • 2 teaspoons Caraway seeds
  • 2 tablespoons Brown sugar
  • 1 cup Apple cider
  • 2 tablespoons Dijon mustard
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Vegetable oil

Directions

Step 1

Heat the vegetable oil in a large skillet over medium-high heat. Season the pork shoulder roast with salt and pepper, then sear on all sides until deeply browned, about 3-4 minutes per side. Set aside.

Step 2

Drain and rinse the sauerkraut to reduce its sourness, if desired. Set aside.

Step 3

Peel and thinly slice the yellow onion and apple. Layer them in the bottom of the slow cooker.

Step 4

Place the seared pork roast on top of the onion and apple slices in the slow cooker.

Step 5

In a bowl, combine the sauerkraut, caraway seeds, brown sugar, and Dijon mustard. Mix until evenly combined, then spread the mixture over the pork roast in the slow cooker.

Step 6

Pour the apple cider over the roast and sauerkraut mixture to add moisture and enhance flavor.

Step 7

Cover the slow cooker and cook on low for 8 hours, or until the pork is tender and easily pulls apart.

Step 8

Once cooked, carefully remove the pork from the slow cooker and shred it with two forks if desired. Serve the pork with the sauerkraut mixture, and garnish with additional mustard or fresh herbs, if preferred.
