Ingredients

  • 4 pieces chicken thighs, bone-in and skin-on
  • 8 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons butter, unsalted
  • 1 cup chicken broth
  • 2 tablespoons lemon juice
  • 4 sprigs fresh thyme
  • 0.5 teaspoon paprika (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Pat the chicken thighs dry with paper towels and season generously with salt, black pepper, and optional paprika.

Step 2

Peel the garlic cloves and lightly crush them with the side of a knife to release their aroma.

Step 3

Heat olive oil in a large skillet over medium-high heat. Sear the chicken thighs, skin-side down, for about 3-4 minutes until golden brown. Flip and sear the other side for an additional 2 minutes. Transfer the chicken to the slow cooker.

In the same skillet, melt the butter and add the crushed garlic cloves. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
