Ingredients

  • 1.5 pounds Boneless skinless chicken thighs
  • 1 large Yellow onion
  • 3 medium Bell peppers (red, green, or yellow)
  • 4 cloves Minced garlic
  • 14.5 ounces Diced tomatoes (canned with juices)
  • 2 cups Chicken broth
  • 3 tablespoons Fajita seasoning
  • 1 tablespoon Cornstarch
  • 2 tablespoons Cold water
  • 2 tablespoons Lime juice
  • 0.25 cups Fresh cilantro (chopped)
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

Slice the yellow onion and bell peppers into thin strips.

Step 3

In a slow cooker, combine the chicken, onion, bell peppers, minced garlic, diced tomatoes (with their juices), and chicken broth.

Step 4

Sprinkle the fajita seasoning, salt, and black pepper over the mixture. Stir to combine.

Step 5

Cover the slow cooker and cook on low for 6 hours or on high for 3–4 hours, until the chicken is tender and thoroughly cooked.

Step 6

In the last 20 minutes of cooking, make a slurry by mixing the cornstarch with cold water until smooth. Stir the slurry into the stew to slightly thicken the broth.

Step 7

Once the stew is done cooking, stir in the lime juice and chopped cilantro.

Step 8

Taste and adjust seasoning, adding more salt or fajita seasoning if desired.

Step 9

Serve the fajita stew hot, either on its own or paired with warm tortillas, rice, or crusty bread.
