  • 1 teaspoon Garlic powder
  • 1 cup All-purpose flour
  • 2 tablespoons Vegetable oil
  • 1 large Yellow onion (sliced)

  • 14.5 ounces Canned diced tomatoes (with their juice)
  • 1 cup Beef broth
  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Season the steak on both sides with salt, black pepper, and garlic powder.

Step 2

Dredge the seasoned steak in the all-purpose flour, coating both sides well.

Step 3

Heat the vegetable oil in a large skillet over medium-high heat. Sear the steak for 2-3 minutes on each side until browned. (You may need to work in batches based on the size of your skillet.)

Step 4

Transfer the browned steak to the slow cooker.

Step 5

In the same skillet, sauté the sliced onion and bell pepper for 3-4 minutes until slightly softened.

Step 6

Add the minced garlic and cook for an additional 30 seconds until fragrant. Transfer the onion, bell pepper, and garlic to the slow cooker.

Step 7

In a bowl, mix together the canned diced tomatoes, beef broth, Worcestershire sauce, tomato paste, and dried thyme. Pour the mixture over the steak and vegetables in the slow cooker.

Step 8

Add the bay leaf to the slow cooker.

Step 9

Cover the slow cooker with the lid and cook on low heat for 6-7 hours, or until the steak is tender and easily falls apart.
