  • 1 tablespoon Brown sugar
  • 1 teaspoon Tamarind paste (optional, for authentic flavor)
  • 1 cup Chicken or beef broth
  • 1 tablespoon Lime juice
  • 1 piece Cinnamon stick
  • 1 piece Star anise
  • 2 leaves Bay leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground cardamom

Directions

Step 1

Prepare the meat by cutting it into 1- to 1.5-inch cubes if using beef chuck or trimming chicken thighs. Set aside.

Step 2

In a slow cooker, combine the Massaman curry paste and one cup of coconut milk, stirring until smooth.

Add the meat to the slow cooker, stirring to coat it evenly in the curry mixture.

Add the peeled and cubed potatoes, chopped carrots, and sliced onion to the slow cooker.
