  • 0.5 tsp smoked paprika
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups cooked white rice (for serving)
  • 2 scallions (chopped, for garnish)

Directions

Step 1

Slice the andouille sausage into 1/4 inch rounds and set aside.

Step 2

Cut the chicken thighs into bite-sized pieces and sprinkle with 1/2 teaspoon of the Cajun seasoning. Set aside.
