Ingredients

  • 6 pieces bone-in, skin-on chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 large yellow onion, diced
  • 4 cloves garlic cloves, minced
  • 14.5 ounces canned diced tomatoes, with juices
  • 1 cup chicken broth
  • 1 cup dry white wine
  • 1 cup kalamata olives, pitted and halved
  • 2 tablespoons capers, drained
  • 1 tablespoon dried herbes de Provence
  • 4 sprigs fresh thyme sprigs
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt and black pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the chicken thighs skin-side down for 4-5 minutes, until the skin is golden brown. Flip and cook for an additional 2 minutes. Remove and set aside.

Step 3

In the same skillet, add the diced onion and cook for 2-3 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Transfer the onion and garlic mixture to the slow cooker. Add the canned diced tomatoes with their juices, chicken broth, white wine, olives, capers, herbes de Provence, and fresh thyme sprigs. Stir to combine.

Step 5

Nestle the seared chicken thighs into the slow cooker, skin-side up, ensuring they are partially submerged in the liquid.

Step 6

Cover the slow cooker with the lid and cook on low for 5-6 hours, or until the chicken is tender and cooked through.

Step 7

Once cooking is complete, discard the thyme sprigs. Taste the sauce and adjust salt and pepper as needed.

Step 8

Serve the chicken warm, spooning the sauce and vegetables over it. Garnish with freshly chopped parsley and serve with crusty bread, rice, or mashed potatoes.
