Ingredients

  • 1 lb Boneless, skinless chicken breasts
  • 2 cups Carrots, peeled and sliced
  • 1.5 cups Celery, sliced
  • 1 large Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 8 cups Chicken broth
  • 1 tsp Dried thyme
  • 1 tsp Dried parsley
  • 2 Bay leaves
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Egg noodles
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Place the chicken breasts in the bottom of your slow cooker.

Step 2

Add the carrots, celery, onion, and garlic to the slow cooker on top of the chicken.

Step 3

Pour the chicken broth over the ingredients in the slow cooker.

Step 4

Sprinkle in the dried thyme, dried parsley, salt, and black pepper. Add the bay leaves as well.

Step 5

Cover the slow cooker with the lid and cook on low for 6-8 hours, or on high for 3-4 hours.

About 30 minutes before the soup is done cooking, remove the chicken breasts, shred them using two forks, and return the shredded chicken to the slow cooker.

Add the egg noodles to the slow cooker at this time, making sure to stir them into the soup.

Continue cooking for another 20-30 minutes on high until the noodles are tender.

Taste and adjust seasoning, adding more salt or pepper if needed. Discard the bay leaves before serving.
