Ingredients

  • 4 lbs Whole chicken
  • 4 large Carrots
  • 3 medium Celery stalks
  • 1 large Yellow onion
  • 4 large Garlic cloves
  • 4 medium Russet potatoes
  • 2 cups Chicken broth
  • 2 tablespoons Olive oil
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Paprika
  • 1 leaf Bay leaf
  • 2 tablespoons Fresh parsley (optional for garnish)

Directions

Step 1

Pat the whole chicken dry with paper towels and rub the skin with olive oil.

Season the chicken generously with salt, black pepper, paprika, dried thyme, and dried rosemary. Set it aside.

Peel and chop the carrots, celery, and potatoes into large chunks. Peel and quarter the onion. Lightly smash the garlic cloves (no need to chop).
