  • 1 lb Chicken breasts
  • 2 cups Carrots, diced
  • 1.5 cups Celery, diced
  • 1 large Yellow onion, chopped
  • 3 cloves Garlic, minced
  • 0.75 cups Pearl barley
  • 14.5 oz Diced tomatoes (canned, undrained)
  • 6 cups Chicken broth
  • 2 Bay leaves
  • 1 tsp Dried thyme
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Ground black pepper
  • 1 cup Frozen peas
  • 2 tbsp Chopped fresh parsley (optional, for garnish)

Directions

Step 1

Place the chicken breasts at the bottom of your slow cooker.

Step 2

Add the diced carrots, celery, onion, and minced garlic on top of the chicken.

Step 3

Rinse the pearl barley under cold water and add it to the slow cooker.

Step 4

Pour in the canned diced tomatoes (including their juice) and chicken broth.

Add the bay leaves, dried thyme, oregano, salt, and ground black pepper. Stir gently to combine.
