Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 4 medium Russet potatoes, peeled and thinly sliced
  • 3 medium Carrots, peeled and sliced
  • 1 cup Frozen peas
  • 1 can (10.5 oz) Cream of mushroom soup
  • 0.5 cup Milk
  • 1 cup Shredded cheddar cheese
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Dried thyme
  • 1 tablespoon Olive oil

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess grease and transfer the beef to the slow cooker.

Step 2

In the same skillet, sauté the diced onion and minced garlic for 2-3 minutes until softened and fragrant. Add these to the slow cooker as well.

Layer the sliced potatoes evenly over the beef and onion mixture in the slow cooker.
