  • 1.5 pounds Baby potatoes

  • 2 tablespoons All-purpose flour
  • 2 tablespoons Olive oil
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 cup Frozen peas

Directions

Step 1

Peel and slice the carrots into 1-inch chunks. Cut the baby potatoes in half or quarters if they are large. Dice the onion into medium-sized pieces. Mince the garlic.

Heat olive oil in a skillet over medium heat. Season the chicken thighs with 0.5 tsp of salt, black pepper, and paprika. Sear chicken thighs in the skillet for about 3 minutes per side until lightly browned. Transfer to the slow cooker.

In the same skillet, add diced onion and garlic. Sauté for 2-3 minutes until fragrant and lightly softened.
