Ingredients

  • 1 pound Dried black beans
  • 6 cups Water
  • 4 cups Vegetable broth
  • 1 large, diced Onion
  • 4 minced Garlic cloves
  • 3 medium, diced Carrots
  • 2 diced Celery stalks
  • 1 medium, diced Red bell pepper
  • 2 teaspoons Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Dried oregano
  • 2 teaspoons, or to taste Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lime juice
  • 0.25 cup, chopped (optional for garnish) Fresh cilantro
  • 1 sliced (optional for garnish) Avocado

Directions

Step 1

Rinse and sort the dried black beans, removing any debris or damaged beans.

Step 2

In a large slow cooker, add the rinsed black beans, water, and vegetable broth.

Step 3

Add the diced onion, minced garlic, carrots, celery, and red bell pepper to the slow cooker.

Step 4

Stir in the ground cumin, chili powder, smoked paprika, dried oregano, salt, and black pepper.

Step 5

Cover the slow cooker with the lid and cook on low heat for 8 hours or on high heat for 4 hours, or until the black beans are tender.

Step 6

Once the beans are cooked, use an immersion blender to partially blend the soup for a creamy texture, leaving some beans whole for added texture. Alternatively, you can transfer some of the soup to a blender, blend until smooth, and return it to the slow cooker.

Step 7

Stir in the lime juice for a bright, fresh flavor.

Step 8

Taste and adjust the seasoning with additional salt and black pepper if needed.

Step 9

Serve the soup hot, garnished with fresh cilantro, avocado slices, or your choice of toppings.
