Ingredients

  • 2 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 1 cup Beef broth
  • 2 tablespoons Tomato paste
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Oregano
  • 12 small Corn tortillas
  • 1 optional Toppings (shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa)

Directions

Step 1

Pat the beef chuck roast dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the beef on all sides until browned, approximately 2 minutes per side. Transfer the beef to the slow cooker.

Step 3

In the same skillet, add the diced onion and sauté until softened, about 3 minutes. Add the minced garlic and cook for an additional 30 seconds. Transfer the onion and garlic mixture to the slow cooker.
