Ingredients

  • 3 pounds beef chuck roast
  • 4 medium carrots, peeled and cut into large chunks
  • 4 medium potatoes, peeled and quartered
  • 3 stalks celery stalks, cut into large chunks
  • 1 large onion, quartered
  • 2 cups beef broth
  • 3 cloves garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Heat a large skillet over medium-high heat and add olive oil.

Step 2

Season the beef chuck roast on all sides with salt and black pepper.

Step 3

Sear the roast in the hot skillet for 3-4 minutes per side, until browned. Remove from skillet and set aside.
