  • 2 bay leaves
  • 8 ounces mushrooms, quartered
  • 1 cup pearl onions (optional), peeled
  • 2 tablespoons parsley, chopped (for garnish)

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes. Pat dry with paper towels and season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the beef in batches until browned on all sides, about 2–3 minutes per side. Transfer the browned beef to the slow cooker.
