Ingredients

  • 2 pounds beef chuck roast
  • 8 ounces baby bella mushrooms
  • 1 medium yellow onion
  • 3 large garlic cloves
  • 1.5 cups beef broth
  • 0.5 cups dry red wine
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 0.5 teaspoons dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Directions

Step 1

Trim excess fat from the beef chuck roast and cut it into 2-inch chunks. Sprinkle with salt and black pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the beef chunks on all sides until golden brown, about 2–3 minutes per side. Transfer the seared beef to the slow cooker.

Step 3

In the same skillet, melt butter over medium heat. Add sliced mushrooms and diced onion. Sauté for 5–7 minutes until softened and lightly browned. Add minced garlic and cook for an additional 1 minute. Transfer the mixture to the slow cooker.

Step 4

In a small bowl, whisk together beef broth, red wine, soy sauce, Worcestershire sauce, flour, dried thyme, and dried rosemary until smooth. Pour the mixture over the beef and mushrooms in the slow cooker.

Step 5

Cover and cook on low for 8 hours or on high for 4 hours, until the beef is fork-tender.

Step 6

Once the cooking time is complete, create a slurry by mixing cornstarch and water in a small bowl. Stir the slurry into the slow cooker and let it cook for an additional 15 minutes on high to thicken the sauce.

Step 7

Taste and adjust salt and pepper, if needed. Serve hot over mashed potatoes, rice, or egg noodles.
