  • 2 pounds beef chuck roast
  • 1 large yellow onion
  • 3 cloves garlic cloves
  • 15 ounces diced tomatoes
  • 15 ounces black beans
  • 1 cup beef broth
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 pieces burrito-size flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 0.5 cup fresh cilantro

Directions

Step 1

Chop the yellow onion into small pieces and mince the garlic cloves.

Step 2

Place the beef chuck roast into the slow cooker. Add the chopped onion, minced garlic, diced tomatoes (with juice), drained and rinsed black beans, and beef broth.
