Ingredients

  • 1 pound Dried pinto beans
  • 6 cups Water
  • 1 medium Onion, diced
  • 3 pieces Garlic cloves, minced
  • 1 cup BBQ sauce
  • 2 tablespoons Brown sugar
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Liquid smoke (optional)

Directions

Step 1

Rinse the dried pinto beans thoroughly under cold water, removing any debris or damaged beans.

Step 2

In a slow cooker, add the rinsed beans and 6 cups of water. Let them soak for 6-8 hours or overnight if time permits. Alternatively, use the quick-soak method by boiling the beans for 2 minutes, removing from heat, and letting them sit for 1 hour before draining.

Step 3

After soaking, drain and rinse the beans, discarding the soaking water.

Step 4

Return the beans to the slow cooker and add 4 cups of fresh water.

Step 5

Stir in the diced onion, minced garlic, BBQ sauce, brown sugar, smoked paprika, ground cumin, salt, and black pepper.

Step 6

If you like a smokier flavor, add the liquid smoke at this stage.

Step 7

Cover the slow cooker with its lid and set it to cook on low heat for 8 hours or until the beans are tender and the sauce has thickened.

Step 8

Stir occasionally during the last few hours of cooking to ensure even distribution of flavors.

Step 9

Once cooked, adjust seasoning to taste by adding more salt or spice if needed.

Step 10

Serve warm as a side dish or enjoy it over rice or with cornbread.
