Ingredients

  • 6 Italian sausage links (mild or spicy)
  • 4 cups Butternut squash (peeled, seeded, and cubed)

  • 2 cups Carrots (peeled and sliced into 1/2-inch pieces)
  • 1 Apple (such as Honeycrisp or Granny Smith, peeled, cored, and chopped)
  • 1 Yellow onion (diced)
  • 3 Garlic cloves (minced)
  • 1.5 cups Chicken stock
  • 0.5 cups Apple cider
  • 2 tablespoons Dijon mustard
  • 2 teaspoons Thyme leaves (fresh, or 1 teaspoon dried)
  • 1 teaspoon Rosemary (fresh, finely chopped, or 1/2 teaspoon dried)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Flat-leaf parsley (chopped, for garnish)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat. Brown the sausage links on all sides for about 5 minutes (they don't need to be fully cooked). Remove from the skillet and set aside.

Step 2

In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and just softened.
