Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 cups Great Northern beans (canned, drained and rinsed)
  • 4 cups Chicken broth
  • 1 cup Diced green chilies (canned)
  • 1 piece Sweet yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 2 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Cayenne pepper (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 ounces Cream cheese
  • 2 tablespoons Fresh cilantro, chopped (for garnish)
  • 4 pieces Lime wedges (for serving)
  • 1 tablespoon Olive oil

Directions

Step 1

Heat olive oil in a skillet over medium heat.

Step 2

Add diced onion and sauté for 3-4 minutes until softened. Add minced garlic and sauté for another 1 minute until fragrant.

Place the chicken breasts in the bottom of the slow cooker.

Add the sautéed onion and garlic on top of the chicken.

Add the Great Northern beans, chicken broth, diced green chilies, cumin, oregano, smoked paprika, cayenne pepper (if using), salt, and black pepper into the slow cooker.

Stir the ingredients gently to combine.
