Ingredients

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 can (10.5 ounces) cream of chicken soup
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 tablespoon Worcestershire sauce
  • 2 cups shredded cheddar cheese
  • 1 bag (32 ounces) frozen tater tots
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil or cooking spray

Directions

Step 1

Heat a large skillet over medium-high heat. Add the ground beef and cook until browned and fully cooked, breaking it into small crumbles with a spoon, about 5-7 minutes.

Step 2

Add the diced onion and minced garlic to the skillet with the ground beef. Cook for an additional 2-3 minutes, or until the onions become translucent. Drain any excess grease.

Step 3

Transfer the cooked beef mixture to a slow cooker. Add the cream of mushroom soup, cream of chicken soup, frozen mixed vegetables, Worcestershire sauce, salt, and black pepper. Stir well to combine.

Step 4

Spread the mixture evenly along the bottom of the slow cooker. Sprinkle 1 cup of shredded cheddar cheese over the top of the mixture.

Step 5

Layer the frozen tater tots evenly over the cheese, covering the mixture completely.

Step 6

Cover the slow cooker with the lid and set it to cook on HIGH for 2-3 hours or LOW for 4-5 hours. The tater tots should be heated through and slightly crispy.

Step 7

During the last 15-20 minutes of cooking, sprinkle the remaining 1 cup of shredded cheddar cheese over the tater tots. Cover and allow the cheese to melt.

Step 8

Once finished, turn off the slow cooker and let the casserole cool slightly. Serve warm and enjoy your comforting tater tot casserole!
