Ingredients

  • 2 pounds sirloin steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 1 medium yellow onion, sliced
  • 3 cloves garlic cloves, minced
  • 2 cups beef broth
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme sprigs
  • 1.5 pounds baby potatoes, halved
  • 4 medium carrots, chopped

Directions

Step 1

Season the sirloin steaks on both sides with salt, black pepper, garlic powder, and onion powder.

Step 2

Dust both sides of the steaks lightly with flour. This will help create a crust when searing and thicken the sauce during cooking.

Step 3

In a large skillet, heat olive oil over medium-high heat. Once hot, sear the steaks for 2-3 minutes per side until browned. Remove the steaks and set aside.

Step 4

In the same skillet, add the sliced onion and minced garlic. Sauté for 2-3 minutes, stirring frequently, until fragrant and slightly softened.

Step 5

Deglaze the skillet by adding 1/2 cup of the beef broth, scraping up any browned bits from the bottom of the pan. Transfer the mixture into your slow cooker.

Step 6

Place the seared sirloin steaks on top of the onion and garlic mixture in the slow cooker.

Step 7

Add the remaining beef broth, soy sauce, Worcestershire sauce, and fresh thyme sprigs to the slow cooker.

Step 8

Scatter the baby potatoes and chopped carrots around the steaks in the slow cooker.

Step 9

Cover the slow cooker with its lid. Set it to low heat and cook for 6-8 hours, or until the sirloin is tender and easily pulls apart with a fork.

Step 10

Once cooked, remove the thyme sprigs and gently stir the vegetables and gravy. Taste and adjust seasoning with additional salt or pepper, if needed.

Step 11

Serve the sirloin warm with potatoes, carrots, and a generous ladle of the rich gravy over the top. Enjoy!
