Ingredients

  • 6 Italian sausage links (mild, sweet, or hot)
  • 3 Bell peppers (assorted colors)
  • 2 Large yellow onion
  • 3 Garlic cloves
  • 28 ounces Crushed tomatoes (canned)
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 6 Sub rolls or hoagie rolls
  • 6 slices Provolone cheese (optional)

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of olive oil.

Step 2

Brown the Italian sausage links on all sides in the skillet. This should take about 5-7 minutes. They don’t need to be fully cooked, as they will finish cooking in the slow cooker. Remove from the skillet and set aside.

Step 3

Slice the bell peppers into thin strips and the onions into half-moon slices.

Step 4

Mince the garlic cloves.

Step 5

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the peppers, onions, and garlic for 4-5 minutes until slightly softened and fragrant.

Transfer the sausages, sautéed peppers and onions, and garlic into a slow cooker.

Add the crushed tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper to the slow cooker. Stir gently to combine, ensuring the sausages are submerged in the sauce.

Cover the slow cooker with its lid and cook on low for 6 hours or on high for 3 hours. The sausages should be cooked through and the vegetables tender.

Preheat the oven to 350°F (175°C) if you want to lightly toast the sub rolls.

Carefully slice the sub rolls in half lengthwise and optionally toast them in the oven for 5-7 minutes.

Once ready, place a sausage on each roll, then top with a generous helping of the peppers, onions, and sauce from the slow cooker.

If desired, place a slice of provolone cheese on top of the sausage and pop the sandwiches back in the oven or under the broiler for 1-2 minutes, just until the cheese melts.
