Ingredients

  • 3 lbs beef chuck roast
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large yellow onion
  • 3 medium carrots
  • 2 medium celery stalks
  • 4 whole garlic cloves
  • 2 cups beef broth
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 tbsp Worcestershire sauce
  • 2 lbs potatoes

Directions

Step 1

Season the beef chuck roast generously with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the beef for about 4-5 minutes on each side until browned. Remove the beef and set it aside.

Step 3

Peel and slice the yellow onion into thick wedges. Chop the carrots and celery into large chunks. Peel the garlic cloves but leave them whole.

Step 4

Place the onion, carrots, celery, and garlic at the bottom of the slow cooker. Arrange the potatoes (cut in half if large) around the vegetables.

Place the seared beef on top of the vegetable mixture in the slow cooker.

Pour the beef broth and Worcestershire sauce into the slow cooker. Add the fresh thyme and rosemary on top of the meat.
