Season the pork loin roast on all sides with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear the pork loin on all sides until golden brown, about 4-5 minutes per side.
Transfer the seared pork loin to a slow cooker.
In the same skillet, add the baby onions and cook for 2-3 minutes, stirring occasionally, until they begin to caramelize. Add the minced garlic and cook for another 30 seconds. Transfer the onions and garlic to the slow cooker.
Pour the chicken broth and balsamic vinegar into the slow cooker. Add the dried cherries and nestle the fresh thyme sprigs around the pork loin.
Cover and cook on low for 5 hours, or until the pork is tender and cooked through (internal temperature should reach 145°F).
Once cooked, transfer the pork loin to a cutting board and let it rest for 10 minutes.
Remove the thyme sprigs from the slow cooker. In a small bowl, mix the cornstarch and water to form a slurry. Stir the slurry into the liquid in the slow cooker to thicken the sauce. Allow it to cook for another 5-10 minutes on high until the sauce thickens.
Slice the pork loin and arrange it on a serving platter. Spoon the baby onions, cherries, and sauce over the top.
Serve warm and enjoy!
