Ingredients

  • 4 pieces Lamb shanks

  • 1 teaspoon Paprika
  • 0.5 teaspoon Turmeric
  • 2 tablespoons Harissa paste
  • 2 tablespoons Tomato paste
  • 400 grams Crushed tomatoes
  • 2 cups Chicken or beef stock
  • 3 medium Carrots, cut into large chunks
  • 1 large Sweet potato, peeled and cubed
  • 0.5 cup Dried apricots, chopped
  • 1 can Chickpeas, drained and rinsed
  • 0.25 cup Fresh parsley or cilantro, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Season the lamb shanks generously with salt and pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the lamb shanks for 2-3 minutes on each side until browned. Set aside.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Sauté the onion until softened, about 5-7 minutes.
