Ingredients

  • 8 pieces lamb chops
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 4 large garlic cloves, minced
  • 1 medium onion, finely chopped
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 cup dry white wine
  • 1 cup chicken or beef broth
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 bay leaves
  • 2 tablespoons tomato paste

Directions

Step 1

Season the lamb chops with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the lamb chops until browned, about 2 minutes per side. Transfer to a slow cooker.

In the same skillet, heat the remaining tablespoon of olive oil. Add the minced garlic and chopped onion, and sauté until fragrant and the onion is translucent, about 3-4 minutes.
