  • 14 ounces diced tomatoes, canned
  • 6 cups vegetable broth
  • 0.75 cup brown rice, uncooked
  • 1 leaf bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups kale or spinach, chopped
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat a large skillet over medium heat and add olive oil. Once hot, sauté the diced onion for 3-4 minutes until softened.

Add the minced garlic to the skillet and sauté for another 1-2 minutes until fragrant. Remove from heat.

Transfer the sautéed onion and garlic mixture to the slow cooker.
