Ingredients

  • 2 pounds boneless leg of lamb
  • 2 tablespoons olive oil

  • 4 garlic cloves, minced
  • 14 ounces diced tomatoes (canned, with juices)

  • 1 cup beef or chicken broth
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 bay leaves
  • 2 anchovy fillets, minced (optional)
  • 2 tablespoons capers, rinsed
  • 1 cup black olives, pitted and chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Directions

Step 1

Pat the lamb dry with paper towels and season it generously with salt and pepper on all sides.

In a large skillet, heat olive oil over medium-high heat. Sear the lamb on all sides until browned, about 2-3 minutes per side. Transfer the lamb to the crock pot.
