Ingredients

  • 4 pieces Boneless pork chops
  • 1 cup Dried cranberries
  • 1 cup Orange juice
  • 2 tablespoons Brown sugar
  • 2 tablespoons Soy sauce
  • 0.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground ginger
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season both sides of the pork chops with salt and pepper.

Step 2

In a large skillet, heat olive oil over medium-high heat. Sear the pork chops for 2-3 minutes on each side until golden brown. Remove from the skillet and set aside.

Step 3

In a medium mixing bowl, combine dried cranberries, orange juice, brown sugar, soy sauce, ground cinnamon, and ground ginger. Stir to mix well.

Step 4

Place the seared pork chops in the slow cooker. Pour the cranberry mixture over the pork, ensuring the chops are fully coated.

Step 5

Cover and cook on low for 4-5 hours or until the pork is tender and cooked through.

Step 6

Once cooking is complete, remove the pork chops from the slow cooker and set them aside on a serving dish.

Step 7

In a small bowl, mix cornstarch and water to create a slurry. Stir this mixture into the cranberry sauce in the slow cooker to thicken. Cover and cook on high for 10-15 minutes, stirring occasionally, until the sauce has thickened.

Step 8

Pour the thickened cranberry sauce over the pork chops and serve hot with your choice of sides such as mashed potatoes or steamed vegetables.
