Ingredients

  • 6 pieces Chicken thighs (bone-in, skinless)
  • 3 medium Carrots
  • 2 stalks Celery stalks

  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 leaves Bay leaves
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and chop the carrots, potatoes, and onion into bite-sized pieces. Slice the celery stalks. Mince the garlic cloves.

Step 2

In a large skillet, heat the olive oil over medium heat. Season the chicken thighs with salt and black pepper, and brown them in the skillet for 3-4 minutes per side until golden. Set aside.

In the same skillet, sauté the onion, garlic, carrots, and celery for 5 minutes until slightly softened.
