  • 6 pieces chicken thighs (bone-in, skin removed)
  • 6 slices bacon

  • 2 tablespoons butter
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken thighs with salt and pepper on both sides.

In a large skillet over medium heat, add 2 tablespoons of olive oil. Sear the chicken thighs for about 3-4 minutes per side, until golden brown. Transfer the chicken to your slow cooker.

In the same skillet, add the bacon slices and cook until crispy. Remove the bacon from the skillet, chop it into bite-sized pieces, and set aside. Reserve about 1 tablespoon of the bacon drippings in the skillet.
