Ingredients

  • 2 pounds Beef chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 cup Beef broth
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 Bay leaf
  • 0.5 teaspoon Red pepper flakes (optional)
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season the beef chuck roast with 2 teaspoons of salt and 1 teaspoon of black pepper on all sides.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the beef until browned on all sides, about 3-4 minutes per side. Remove the beef and set aside.

In the same skillet, add the diced onion and sauté for 3-5 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
