  • 3 tbsp all-purpose flour
  • 1 cup red wine (optional)
  • 1 tsp salt
  • 1 tsp black pepper

Directions

Step 1

Cut the beef chuck roast into 1.5-inch cubes. Season the beef generously with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef in batches until browned on all sides. Remove and set aside.

Dice the onions, and cut the carrots, celery, and potatoes into bite-sized chunks. Mince the garlic.

In the same pot, add the onions, carrots, and celery. Cook for about 5 minutes, stirring occasionally, until softened.

Add the minced garlic and tomato paste, and cook for 1-2 minutes until fragrant.

Sprinkle the vegetables with the flour and stir to coat. Let cook for 2 minutes to remove the raw flour taste.
