  • 500 grams All-purpose flour
  • 100 grams Granulated sugar
  • 7 grams Active dry yeast
  • 250 milliliters Milk
  • 80 grams Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 whole Zest of lemon
  • 50 grams Raisins (optional)
  • 1 large Egg yolk
  • 1 tablespoon Milk (for egg wash)

Directions

Step 1

Warm the milk slightly (to about 40°C or 105°F) and stir in the granulated sugar and active dry yeast. Allow it to sit for about 10 minutes until the mixture becomes frothy.

Step 2

In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and pour in the yeast mixture.

Add the eggs, melted butter, vanilla extract, and lemon zest to the bowl. Mix to combine until a sticky dough forms.

If using raisins, fold them into the dough at this stage.

Transfer the dough to a lightly floured surface. Knead for about 10–12 minutes until the dough becomes smooth and elastic.
