Peel and chop the potatoes into even-sized chunks. Boil in a large pot of water until tender, about 15 minutes. Drain well and let cool slightly.
Using a potato masher or ricer, mash the cooked potatoes in a large bowl until smooth.
Add the flour, egg, and 1 teaspoon of salt to the mashed potatoes. Mix until a soft, slightly sticky dough forms.
Bring 4 quarts of salted water to a boil in a large pot.
On a floured surface, roll small portions of the dough into ropes about 1/2 inch thick. Cut into 1-inch pieces to form the dumplings.
