Ingredients

  • 12 ounces Cheese tortellini
  • 1.5 cups Cherry tomatoes
  • 1 medium Cucumber
  • 1 large Red bell pepper
  • 0.25 cup Red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup Feta cheese, crumbled
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Red wine vinegar
  • 1 tablespoon Lemon juice
  • 2 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil and cook the cheese tortellini according to the package instructions. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Step 2

While the tortellini is cooling, prepare the vegetables. Slice the cherry tomatoes in half, dice the cucumber and red bell pepper, and thinly slice the red onion. Add them to a large mixing bowl.

Slice the Kalamata olives in half and add them to the bowl. Add the crumbled feta cheese as well.
