Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 10 ounces tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup sour cream
  • 0.25 cup sliced green onions
  • 0.5 cup diced fresh tomatoes
  • 2 tablespoons chopped fresh cilantro (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion and green bell pepper. Sauté for 3-4 minutes or until softened.

Step 3

Add the minced garlic and cook for an additional 30 seconds, stirring frequently.

Step 4

Add the ground beef to the skillet, breaking it up with a spoon. Cook until the beef is browned and cooked through, about 5-6 minutes. Drain any excess fat.

Step 5

Stir in the tomato paste, ketchup, Worcestershire sauce, brown sugar, chili powder, smoked paprika, salt, and black pepper. Mix well and cook for another 2 minutes to let the flavors meld. Remove from heat.

Step 6

Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or aluminum foil for easy cleanup.

Step 7

Spread the tortilla chips evenly over the baking sheet.

Step 8

Spoon the Sloppy Joe mixture evenly over the tortilla chips.

Step 9

Sprinkle the shredded cheddar cheese and Monterey Jack cheese evenly over the top.

Step 10

Bake in the oven for 8-10 minutes, or until the cheese is melted and bubbly.

Step 11

Carefully remove the nachos from the oven and allow to cool for a minute.

Step 12

Top the nachos with sour cream, diced fresh tomatoes, sliced green onions, and optional cilantro.

Step 13

Serve immediately and enjoy your Sloppy Joes Nachos!
