Preheat your oven to 400°F (200°C).
Thoroughly wash and dry the russet potatoes. Pierce each potato several times with a fork, then place them on a baking sheet.
Bake the potatoes in the preheated oven for 50–60 minutes, or until the skin is crispy and a fork easily slides into the center. Remove from the oven and let cool slightly.
While the potatoes are baking, prepare the Sloppy Joe filling. Heat a large skillet over medium heat and add the ground beef. Cook the beef, breaking it apart with a wooden spoon, until browned and fully cooked, about 6–8 minutes. Drain any excess grease.
