Ingredients

  • 1 pound Ground beef (80/20 lean)
  • 1 medium Yellow onion, finely chopped
  • 2 Garlic cloves, minced
  • 0.75 cup Ketchup
  • 1 tablespoon Tomato paste
  • 1 tablespoon Brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 0.25 cup Beef broth
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.75 cup Cornmeal
  • 1 cup All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.25 teaspoon Salt (for cornbread)
  • 1 cup Milk
  • 1 Eggs
  • 4 tablespoons Unsalted butter, melted

Directions

Step 1

Preheat the oven to 400°F (200°C) and lightly grease an 8-inch square baking dish for the cornbread.

Step 2

In a bowl, whisk together the cornmeal, flour, sugar, baking powder, and 1/4 teaspoon of salt.

Step 3

In a separate bowl, combine the milk, egg, and melted butter, mixing until well combined.

Step 4

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

Step 5

Pour the cornbread batter into the prepared baking dish and smooth the top. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.

Step 6

While the cornbread bakes, heat a large skillet over medium heat and cook the ground beef until browned, breaking it up with a spoon. Drain any excess grease.

Step 7

Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another 30 seconds.

Step 8

Add the ketchup, tomato paste, brown sugar, Worcestershire sauce, Dijon mustard, beef broth, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the skillet. Stir well.

Step 9

Reduce the heat to low and simmer the Sloppy Joe mixture for 10-12 minutes, stirring occasionally, until thickened.

Step 10

Once the cornbread has cooled slightly, cut it into squares and serve warm, topped with generous spoonfuls of the Sloppy Joe mixture.
