Ingredients

  • 1 lb ground beef
  • 1 medium, diced yellow onion
  • 1 medium, diced green bell pepper
  • 2 minced garlic cloves
  • 15 oz can tomato sauce
  • 0.5 cup ketchup
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 1 tbsp brown sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 4 brioche sandwich rolls
  • 2 tbsp butter
  • 1 cup shredded cheddar cheese

Directions

Step 1

In a large skillet over medium heat, melt 1 tablespoon of butter. Once melted, add the diced onion and green bell pepper. Sauté for 3-5 minutes until softened.

Step 2

Add the minced garlic to the skillet and sauté for an additional 1 minute until fragrant.

Step 3

Push the vegetables to one side of the skillet and add the ground beef. Break it up with a spatula and cook for 6-8 minutes, or until browned and no longer pink. Drain any excess fat, if necessary.

Step 4

Reduce the heat to low and stir the vegetables back into the ground beef. Add the tomato sauce, ketchup, Worcestershire sauce, smoked paprika, chili powder, brown sugar, salt, and black pepper to the skillet. Stir well to combine.

Simmer the mixture on low heat for 10-12 minutes, stirring occasionally, until the sauce thickens.

Step 6

While the meat mixture simmers, preheat a large griddle or skillet over medium heat. Melt the remaining 1 tablespoon of butter and toast the brioche sandwich rolls, cut side down, until golden brown. This should take 2-3 minutes.

Step 7

Spoon a generous portion of the sloppy beef mixture onto the bottom half of each toasted roll. Sprinkle shredded cheddar cheese on top of the meat while it’s still hot so the cheese melts slightly.

Step 8
