  • 4 large caps Portobello mushrooms
  • 1 large Yellow onion
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 2 tablespoons Soy sauce
  • 0.5 cup Barbecue sauce
  • 2 tablespoons Tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Brown sugar
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Salt
  • 4 Burger buns
  • 1 tablespoon Butter

Directions

Step 1

Clean the portobello mushroom caps with a damp paper towel and remove their stems. Dice the mushrooms into small, pea-sized pieces.

Step 2

Peel and finely dice the yellow onion. Mince the garlic cloves.

Step 3

Heat a large skillet over medium heat and add olive oil. Once the oil is shimmering, add the diced onion and cook for 5–7 minutes until softened and lightly caramelized.

Add the minced garlic and cook for 1 minute until fragrant.

Stir in the diced mushrooms and cook for 6–8 minutes, stirring occasionally, until the mushrooms release their moisture and start to brown.
