Ingredients

  • 2 cups All-purpose flour
  • 1 cup Unsalted butter
  • 0.25 cup Cold water
  • 2 tablespoons Olive oil
  • 1 large, diced Onion
  • 2 medium, diced Carrot
  • 2 diced Celery stalks
  • 3 minced Garlic cloves
  • 2 cups Chicken or vegetable broth
  • 0.5 cup Heavy cream
  • 1 cup Cooked shredded chicken (optional)
  • 2 medium, peeled and diced Potatoes
  • 0.5 cup Peas
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 large (for egg wash) Egg
  • 1 tablespoon (for egg wash) Milk

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

To make the crust, combine the all-purpose flour and salted butter in a bowl. Use a pastry cutter or fingertips to mix until the mixture resembles coarse crumbs.

Step 3

Add the cold water, one tablespoon at a time, and knead gently until the dough comes together. Wrap the dough in plastic wrap and refrigerate for at least 15 minutes.

Step 4

Heat olive oil in a large skillet over medium heat. Add the diced onion, carrots, celery, and garlic. Sauté for 5 minutes, or until the vegetables begin to soften.

Step 5

Stir in the potatoes and cook for another 5 minutes.

Step 6

Add the chicken or vegetable broth, heavy cream, dried thyme, salt, and pepper. Bring the mixture to a simmer and cook until the potatoes are tender, about 10 minutes.

Step 7

If using, stir in the cooked shredded chicken and peas. Remove from heat and let the filling cool slightly.

Step 8

Roll out the chilled dough on a floured surface until it is about 1/8-inch thick. Cut out a piece to fit the top of your baking dish or ramekins if making individual portions.

Step 9

Pour the filling into a baking dish or individual ramekins. Place the crust over the top, trimming any excess dough. Press the edges to seal and cut a few slits in the crust to allow steam to escape.

Step 10

Beat the egg with the milk to create the egg wash. Brush it over the crust for a golden finish.

Step 11

Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown and the filling is bubbling.

Step 12

Let the Slondy S cool for 5 minutes before serving. Enjoy!
