Ingredients

  • 400 grams snow peas
  • 60 grams sliced almonds
  • 15 grams unsalted butter
  • 1 tablespoon olive oil
  • 1 whole garlic clove
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh parsley (optional, for garnish)

Directions

Step 1

Rinse the snow peas thoroughly under running water and pat them dry with a clean towel. Use a knife to trim the ends and remove any stringy edges if needed.

Step 2

Thinly slice the garlic clove into small slivers.

Step 3

In a large skillet, heat the olive oil and butter over medium-low heat until the butter is melted and begins to foam.

Step 4

Add the almond slices to the skillet and toast them gently, stirring frequently, for 2-3 minutes or until they become lightly golden and fragrant. Be careful not to let them burn. Remove the almonds from the skillet and set them aside.

Step 5

Add the slivered garlic to the skillet and sauté for 1 minute or until it becomes aromatic, being careful not to brown the garlic.

Step 6

Increase the heat to medium and add the snow peas to the skillet. Sprinkle with salt and pepper to taste. Stir-fry the snow peas for 3-5 minutes, or until they turn bright green and are tender-crisp.

Step 7

Turn off the heat and stir in the lemon zest. Toss the snow peas gently to coat them evenly.

Step 8

Transfer the cooked snow peas to a serving dish and sprinkle the toasted almonds over the top. Garnish with fresh parsley, if desired.

Step 9

Serve immediately as a side dish to complement meats, fish, or vegetarian mains.
