Ingredients

  • 450 g beef (flank steak or sirloin)
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp Shaoxing wine (or dry sherry)
  • 3 tbsp vegetable oil
  • 2 tbsp fermented black beans
  • 3 pcs garlic cloves, minced
  • 1 tbsp ginger, minced
  • 2 tbsp oyster sauce
  • 1 tsp sugar
  • 1 cup chicken stock (or water)
  • 250 g Chinese broccoli (gai lan), roughly chopped
  • 4 cups cooked jasmine rice

Directions

Step 1

Slice the beef thinly against the grain and place it in a mixing bowl.

Step 2

Marinate the beef by adding soy sauce, cornstarch, and Shaoxing wine. Mix well and let it sit for 15 minutes.

Step 3

Rinse the fermented black beans under water to remove excess salt. Chop them finely and set aside.

Step 4

Heat 2 tbsp of vegetable oil in a wok or large skillet over high heat.

Step 5

Add the beef to the wok in a single layer. Sear for 1-2 minutes on each side until browned. Remove the beef from the wok and set it aside.

Step 6

Add the remaining 1 tbsp of vegetable oil to the wok. Stir in the minced garlic, ginger, and chopped black beans. Stir-fry for about 30 seconds until fragrant.

Step 7

Add the Chinese broccoli to the wok. Cook for 2-3 minutes, stirring frequently, until it starts to soften.

Step 8

Return the beef to the wok, then add oyster sauce, sugar, and chicken stock. Stir everything together until the sauce thickens slightly and coats the beef and broccoli evenly. This should take about 2-3 minutes.

Step 9

Serve the beef and broccoli mixture over a bed of warm cooked jasmine rice.
