  • 4 chopped bacon slices
  • 1 cup shredded cheddar cheese
  • 2 tablespoons, chopped fresh parsley
  • 0.5 cup sour cream (optional)

Directions

Step 1

Peel the russet potatoes and dice them into 1/2-inch cubes. Place them in a bowl of cold water to prevent browning.

Step 2

In a large skillet or cast-iron pan, cook the chopped bacon over medium heat until crispy. Remove the bacon pieces and set them aside on a plate lined with paper towels. Leave about 1 tablespoon of bacon grease in the skillet.

Add the butter and olive oil to the skillet with the bacon grease and heat over medium heat until the butter is melted.
