Ingredients

  • 14.75 oz canned salmon (drained and flaked)
  • 0.5 cup panko breadcrumbs
  • 1 egg
  • 2 tbsp mayonnaise
  • 0.5 cup green bell pepper (diced)
  • 0.25 cup red onion (diced)
  • 2 tbsp fresh cilantro (chopped)
  • 1 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp olive oil (for frying)

Directions

Step 1

In a large mixing bowl, add the drained and flaked canned salmon, removing any large bones if desired.

Step 2

Add the panko breadcrumbs, egg, and mayonnaise. Stir until well combined.

Step 3

Fold in the diced green bell pepper, diced red onion, chopped cilantro, and lime juice.

Step 4

Sprinkle in the ground cumin, chili powder, smoked paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Step 5

Divide the mixture into 4 equal portions and shape each portion into a patty about ½ inch thick.

Step 6

Heat the olive oil in a large nonstick skillet over medium heat.

Step 7

Once the oil is hot, carefully place the salmon patties in the skillet. Cook for 4-5 minutes per side, or until golden brown and crispy on the outside.

Step 8

Remove the patties from the skillet and place them on a paper towel-lined plate to drain any excess oil.

Step 9

Serve the salmon patties warm with your favorite Southwestern-inspired sides, such as avocado salsa, a dollop of sour cream, or a fresh green salad.
